Today I’d like to share with you a classic Chinese dish, Chicken with Ginger Scallion Oil. It might sound like a complicated dish to make. But you’ll be surprised how easy it is, and yet super tasty. Let’s get started!

Prep time: 20 minutes
Marinate time: 20 minutes
Cook time: 45 minutes 

For the chicken and marinade:
1 (4 pounds) whole free-range chicken 
2 teaspoons salt
2 tablespoons ginger puree (1/2 inch piece ginger and 2 tablespoons water)
2 tablespoons Shaoxing wine
1 tablespoon avocado oil, or other cooking oil
1 large ginger, sliced 

For the ginger scallion oil:
2/3 cup avocado oil, or other high smoking point oil
1 bulb shallot, thinly sliced
2 stalks scallions, minced
1 ½ tablespoons grated ginger
1/2 teaspoon salt
