【 Ingredients you'll need for the batter】
- One cup of all-purpose flour
- One tablespoon of sweet potato powder
- One cup of very cold ice water
- One iced egg
- One teaspoon each of salt and white pepper
- One teaspoon of garlic powder
【 Ingredients for the pancake】
- About 300 grams of seafood (I used octopus feet and salmon)
- 150 grams of leeks
- Half of a large carrot
- Half of a small onion
- All of the batter
【Ingredients for the dipping sauce】
- Two tablespoons of soy sauce
- One tablespoon of black vinegar
- One tablespoon of white vinegar
- One teaspoon of sugar
- A few drops of sesame oil
- Some sesame seeds
- One teaspoon of Korean chili powder (optional)
Now, let's start making the pancakes:
Step 1: In a large bowl, mix the dry ingredients for the batter and crack in the iced egg.
Step 2: Add very cold ice water to the flour mixture. The colder the batter, the crispier the fried cake.
Step 3: Stir the mixture until it's smooth, then put the whole bowl in the refrigerator for half an hour. Take it out of the fridge and give it another stir before using it.
Step 4: Cut the seafood into small pieces and shred the onion and carrot. Cut the leek into small pieces. Add all the ingredients to the batter and mix well. Make sure every ingredient is covered with a thin layer of batter. The ratio of ingredients to batter is about 2:1.
Step 5: Heat a flat-bottomed non-stick pan with two tablespoons of oil until it smokes slightly. Turn the heat to medium and scoop a tablespoon of batter into the pan. Quickly flatten it with a spatula.
Step 6: After about five minutes, flip the pancake. If it doesn't turn over, use a large plate to cover the pan and flip it upside down. Fry until both sides are slightly darker golden.
Step 7: Fry until both sides are slightly darker golden. Don't flip the pancakes too many times, or they may break apart.
Step 8: This amount of batter can fry two pancakes about eight inches in diameter.
Step 9: Cut the pancake into small pieces with a knife.
