INGREDIENTS FOR 2 PEOPLE
Salmon: 1.1 lb (500 g)
Yellow cherry tomatoes: 5.3 oz (150 g)
Cherry tomatoes: 5.3 oz (150 g)
Taggiasca olives: 1.8 oz (50 g) about 3 1/2 tbsp
Salt-cured capers: 0.35 oz (10 g) about 1 tbsp
Garlic: 2 cloves
Oregano: as needed
Fine salt: as needed
Black pepper: as needed
Extra virgin olive oil: as needed
Thyme: as needed

PROCEDURE:
To prepare the Mediterranean-style salmon fillets, start by cutting the cherry tomatoes in half and seasoning them with 2 cloves of garlic, salt, pepper, olive oil, and oregano. Mix well and set aside.

Remove any bones from the fillets using tweezers. Place the fillets in a baking dish lined with parchment paper. Add the cherry tomatoes, olives, and desalted capers.

Season the salmon with oil, salt, and pepper, then sprinkle with dry oregano sprigs and fresh thyme over the entire dish. Bake in a preheated conventional oven at 450°F for about 20 minutes. Your Mediterranean-style salmon fillets are ready.
