World’s Softest Sponge Cake/ Bakery Style Vanilla Sponge Cake Recipe/ 3 Ingredient Cake without Oven

This Easy Sponge Cake recipe is delicious and quick to make. My light and moist vanilla sponge cake is super versatile. It can be used to make layered birthday cakes, strawberry shortcakes, trifles, icebox cakes, mini desserts, and more.

Ingredients:

Large Eggs _ 4

Sugar _ 100g OR 09 TBSP

Salt _ 1 pinch OR 1g

Vanilla _ 1 tsp or to taste

All Purpose Flour _ 100g OR 10 TBSP

Instructions:

1. Preheat Oven to 180˚C. Grease cake pans with oil.

2. Separate the Eggs Yolk and White

3. In the bowl beat 4 large egg whites for 30sec on Medium speed.

4. With the mixer on, gradually add sugar and continue beating until thick and fluffy.

5. Beat until you get stiff peak.

6. Add salt 1 pinch and Vanilla essence. Mix it well.

7. Add egg yolks one by one, mix it.

8. Add cake flour in 2 to 3 batches. * ( no need to add baking powder & baking soda)

9. Mix gently from bottom to top.

10. Bake it for 30 minutes. Mine was done at 30min. The timing may vary depending on your oven and the size of cake pan

11. Baking Time;

For Pan:

Bake in a preheated pan on low to medium heat for 30-35 minutes OR until the skewer comes out clean

For Oven:

Bake in a preheated oven at 180C for 25-30 minutes OR until the skewer comes out clean.

Tips:

  1. To make the fluffy & spongy cake stiff peak is important
  2. Mixing is important to make the sponge cake light and fluffy. If you do not mix it properly, Cake will not bake perfectly and you will get hard or dense cake
  3. Do not over mix! In that case foam will break and you will not get fluffy Cake
