This is a traditional japanese dessert soup made with azuki beans. The sweet red bean soup is served hot with mochi or shiratama dango inside the soup. Perfect for winter time ^_^

Recipe:

-200g azuki beans
-150g sugar
-1 liter water
-pinch of salt
-50g glutinous rice flour 
-1 tsb sugar 
-30-40ml water

Instructions:

Rinse azuki beans under cold water. In a large pot, combine the beans and water. Bring to a boil, then reduce the heat to a simmer. Cook the beans until they are soft and can be easily mashed. This takes about 1 hour to 1 1/2 hours. 

Add sugar to the pot and stir well until the sugar dissolves. Simmer the sweetened beans for an additional 20-30 minutes, allowing the flavors to meld. Add a pinch of salt to enhance the sweetness.

Mix glutinous rice flour with sugar and some water until a smooth dough is formed (soft as earlobes). Mix thoroughly and roll the dough into a long shape and cut into small balls. Press in the middle and make a small dent.

Place the balls in boiling water and cook until they rise to the surface. Then rinse with cold water. Place the mochi in the serving bowl and pour the sweet red bean soup over the mochi.
